Amaretto cake

1 box Betty Crocker GF yellow cake mix
1 stick butter
3 eggs
2/3 cup amaretto

mix all that and bake like directions say. I prefer a bundt pan for 40 minutes.

As soon as it comes out of the oven mix 1/2 cup amaretto and 1 cup powdered sugar. Poke holes in cake, and drizzle over cake, allow it to soak in for a good 1/2 hour or so. Turn cake over and allow to gradually slide out. Sometimes take a little wiggling. Toast a cup of slivered or shaved almonds, let cool. Mix another 1/3 cup and 1 1/2 cups powdered sugar and drizzle half over cake, sprinkle almonds on top and drizzle with remaining glaze.

Napa Salad

This one is from Cooper's Hawk, absolutely delicious!
Honey mustard Vinaigrette
1/4 cup white vinegar
2 tbsp honey
3tbsp dijon mustard
1/2 tsp black pepper
2 tsp salt
2 tsp chopped/diced garlic
1/2 cup veg oil
4 drops hot sauce

mix all that together and let set, while prepping salad

Spring Baby Lettuce, I used one of the small containers
one Yellow Delicious Apple chopped
container of goat cheese crumbles
package of dried cherries
small bag of frozen corn, thawed
one chopped avocado
handful or two of toasted almonds
halved grape tomato (about half a pint)
Roasted turkey breast (or chicken), chopped

Toss all salad ingredients in large bowl, drizzle dressing and serve. There were no leftovers. Even the men enjoyed!!!
