So I was headed to Sam's this morning and missed my usual exit.......so I got off at the next exit and guess what I found??????

SO I had to run home and see about GF stuff for me to eat there. We are SO going to the grand opening!!!! This is one of the most exciting things to happen to me in a while.
Anywhoooooo, they have a website with their GF menu items......and it looks as though I will be able to have a decent meal there!!! The fries may be off limits, unless I can convince them to heat me up some fresh oil. I just LOVE those skinny fries!!! with cheese on top.
Oh, my does that bring back memories.........

Oh, and while at Sam's I called Unilever about something I was buying. I was told that Unilever will clearly label anything that has the top 8 allergens. And the lady even rattled off wheat, rye, barley and malt as the gluten allergens (or whatever!). Anywhoooo, so now Kraft, Unilever and ConAgra brands are a-ok for me to eat, as long as I've read the label.

I'm a busy mom with 4 growing boys....recently divorced and back to school myself full time to add to the chaos. Gluten Free cooking scares a lot of people, but it shouldn't....I'm hopeful that this blog can help people make the transition a little less scary.

- I'm the mother of 4 boys.....from high school graduate to elementary school, 10 year span from oldest to youngest. Recently divorced, back to school full time, was a stay at home mom for 15 years. Diagnosed with Rhuematoid Arthritis in 1999, Gluten Allergy/Celiac in 2005. Have not had an RA flare up since going GF!!! There isn't enough money in the world to make me eat gluten!
Blah, blah, blah, blah, blah.....
1. I babble. A lot. In real life and in cyber space. Sorry, it is just is who I am and I'm not likely to change that about myself anytime soon.
2. My recipes are usually a mish mash of more than one that I have 'tweaked'. So just beware if you follow one of my recipes. I rarely make the exact same thing twice, there is usually some variant. Play, have fun, it's food, enjoy it!!!
3. Cooking times on all my recipes are approximations. I rarely set a timer. I've gotten better at setting the timer as life has gotten crazier, but I still like to burn things on occasion, just to keep everyone on their toes. Plus it's a good excuse to open the windows and air out the house.
4. I have picky boys. Your boys might not like the taste, texture, color of some of my recipes, but my boys do and that is all I can strive for. Sorry, I can't make everyone happy, I just do what I can to keep my crew on the go.
5. If you have something I need to try, some tweak you have made, some bad outcome, let me know.....I like to change things up and may not have tried what you have tried.
6. Cooking is an experiment. You have to be able to fail and just have fun. If the crust is bad, then eat the filling, if the filling is bad then eat the crust, and if the whole thing is bad, well, just open a bottle of wine and tell the kids to make soup.
7. Always remember, Blessed are we who can laugh at ourselves for we shall always be amused.......
