Popcorn snack mix


1 bowl air popped popcorn (about 1/2 cup unpopped)
half a bag of Glutino pretzels partially broken
1 1/2 cupsish cocktail peanuts
1 (11oz) bag of mini M&M's
1-2 cups Gorilla Munch Envirokids cereal
1 cup chow mein noodles (we used Grandma Ferndon's) (could substitute any GF cereal or etc)

Mix all that in a large bowl, make sure all unpopped popcorn kernel's are out.

Melt 1 stick butter, 1 1/4 cup packed brown sugar and 1/3 cup light corn syrup in microwaveable bowl. Stir and cook another couple minutes in microwave until bubbly. Pour over popcorn mixture.

Toss/stir gently to coat everything. Pour onto waxed paper or parchment paper lined baking pans (we needed 2 large pans). Let dry and break into chunks and EAT! Store in airtight container.

I think we gained about 80lbs today...... we made oatmeal butterscotch cookies, recipe to come later......fudge......thin mints(recipe coming later).....mini cheesecakes....and we tested every single batch.

Jalepeno Corn Dip

...but I didn't use jalapenos, so should I change the title????

1 can corn, drained
1 cup mayo
2 cups mexi cheese, with the spices, finely shredded
2 cups co-jack cheese blend, finely shredded
1 can diced green chilis

mix it all up and bake at 350 for about 20 minutes or until browned and bubbly....eat with corn tortilla chips.

Now.....for the Jen version.......add a rotisserie chicken, skinned and shredded, and another can of green chilies...bake and then wrap in tortillas and eat with a salad.......is yummy.....all good reviews!! And with my family....well......that doesn't happen too often!!!!

Tomato soup and grilled cheese bread

Grant LOVES tomato soup, but I don't buy the Campbells anymore, since I can't use it in my regular cooking. So last night I tried something......and just so you know, I did not try this as I don't care for plain old tomato soup, but Grant loved it.

8 oz tomato sauce (small can)
5.5 oz V8 (low sodium, small can)
1 cup water
1 tsp Better Than Boullion chicken flavor

heat that on stove and serve. Made 2 bowls full.

for this I used a Kinnikinik pizza crust, both sides buttered and place in oven about 350 until browned, I had to flip it once, to get both sides browned.

Then a slice of American cheese and a slice of Muester cheese, back in oven until cheese melts. Slice into 1/4's and serve with soup.

That I did eat, and it was yummy. I generally don't care for the "K" pizza crusts, they are too thick and sweet for me, but this use was good for them. I usually only use them in a pinch.

fruit smoothie

1/2 cup o.j.
1 1/2 cups flavored or plain yogurt (close enough)
1 cup fresh or frozen fruit
1 banana
2 t. honey (if desired, I usually don't)
4-6 ice cubes (less if using frozen fruit)

blend all in blender until smooth.....slurp up!! The boys LOVE this, with any number of combinations.....

cheese hashbrowns

So the whole guest thing, and we only have a few eggs this morning.....so we were at Outback the other night and David ordered cheese fries....they looked soooooo good. I ate one. Had a bit of GI issues later, but 'tis life.....so anywhoooooo, been craving them since that night.

So this morning I browned hashbrowns in the pan, with a little bacon crumbled up. Sprinkled that with pepper and Lawry's season salt and when it was all nice and browned I sprinkled some shredded cheddar on top.

The kiddo's gobbled it up. I wish I'd made some sauce to pour over it too, but it was yumymy anyway.....

a quick easy snack, breakfast, etc....

PB & J

SO, Ya know how you're fixing the kid a PB & J (that would be peanut butter and jelly, for those of you not in the know!) and it looks soooooo yummy and you realllly want one, BUT 1...you can't eat thier bread and 2....gluten free bread just doens't taste the same unless toasted and 3.. who wants a toasted PB&J????

SO I am thinking I will jsut suffer through with my GF bread and PB&J... but THEN I think pancakes..... hmmmmmm. ..... I do have some leftover from yesterday ...... pancakes with PB&J rolled up and eaten. Now that could work.

So that is what I do.

It is YUMMMMY, hits the spot just right and now I have a new favorite. I can eat PB&J and not gum my bread to death. (plus pancakes are soft enough I can actually chew them with these stupid braces)

SO .... next time I make pancakes I am going to make a TON of them and store them in the fridge/freezer. I usually make a few extra anyway, and it is sooo easy to whip them up I have no excuse now.

Just wanted to share. I know SOMEONE out there will be excited about this discovery of mine!!

Hummus

This is a snack that Landon and I LOVE. We also serve it after school and at get-togethers. We use Baked Lay's potato chips to dip, but you can use veggies or any GF bread product you like. I am still working on a GF pita type thing to dip.



1 can garbanzo beans, drained

1 7oz can of roasted red bell pepper with juice

1/3 cup tahini (you can leave this out, but I like the nutty flavor it adds) substitute with plain yogurt or sour cream

1-2 tsp chopped garlic

a dash or 2 of basil



Dump everything in a blender or food processor and blend until smooth. You can add lemon juice (1 tbsp at a time) if it needs to be thinned out.


You can also add jarred jalapenos and some of that juice if you want a bit of a "bite" to your hummus.

small can of black olives with juice
artichokes with juice
